Last pennsic class

I am thinking of teaching a class called "Creating Order Out of Chaos- Feasts for 20 or 200". This class will focus on running feasts of any size. Topics include: portion control, kitchen organization, food challenges, and course management.

Thoughts?

Yep....

Too ambitious for one hour (or even 2) at Pennsic. The idea s good, but not the best venue IMO

I have it as a 1 hour class. Should I bump it to 2? This will a starting point and I will probably run it again at different venues.

If you're determined to teach this class...

I'd do 2 hours. However, I'd advise against it for the following reasons:
-Pennsic IMO might not have the info retention factor as an EKU
-A lot of info to expound upon; the topics might be narrowed down for sharper focus
-Have a care to not let it turn into a horror-story roundtable; each of the topics mentioned above have a 75% chance of generating such discussion with a group of experienced cooks
-Differing skill levels will want to know different things about each topic and may draw the class away from point

I taught a food allergen/challenges class last year at war. Nearly 35 people showed up.

I am a little tired of the some of the whining (it cant be done, my kitchen is always crazy, no one taught me these things, and so on and so on.) I guess I'd like to see a little less poor me in the kitchen and more power to the people. But then again, that might be my newness coming out again.

Wouldn't mind talking with you about it at Roses. If you are up to it.

"poor me"

Been there, done that, gave back the T-shirt. Power to the people only works when the People want the Power. While it may seem to some as if I'm being elitist and not wanting to teach anyone anything, or I'm a Stuffy Pelican, or whatever fallacy, but the truth is you can't teach everyone everything. You *absolutely* can't teach someone responsibility for their actions which IMNSHO the "poor me" attitude falls into. Sorry...hot button issue :-D

Be happy to talk with you at Roses, BTW

Nope you sound like a reasonable guy. I am just glad I haven't whacked those "poor" souls upside the head with my wooden spoon.

And that should tell you something

It's a good bet you'll get some of "those people" at your class...

you do realize this is a VACATION right?
this is like the 10th class you've talked about teaching lol

Yes, but I am only actually teaching 3. The deadline is tomorrow. :D

Not like I'm actually going to be able to be fencing. I 'might' be walking by then. I hope.

A thing of beauty. And probably ought to be mandatory for Feast STewards. ;-)

Oooh, ooh, I'll be there.
