Last pennsic class
Apr. 29th, 2010 02:20 pmI am thinking of teaching a class called "Creating Order Out of Chaos- Feasts for 20 or 200". This class will focus on running feasts of any size. Topics include: portion control, kitchen organization, food challenges, and course management.

-A lot of info to expound upon; the topics might be narrowed down for sharper focus
-Have a care to not let it turn into a horror-story roundtable; each of the topics mentioned above have a 75% chance of generating such discussion with a group of experienced cooks
-Differing skill levels will want to know different things about each topic and may draw the class away from point

Date: 2010-04-30 02:01 am (UTC)I am a little tired of the some of the whining (it cant be done, my kitchen is always crazy, no one taught me these things, and so on and so on.) I guess I'd like to see a little less poor me in the kitchen and more power to the people. But then again, that might be my newness coming out again.
Wouldn't mind talking with you about it at Roses. If you are up to it.
