I have started researching paellas and drinking chocolate. Fascinating things, Spanish foods. The Moorish influence on regional cooking are amazing. I will get to play with some of my favorite spices including saffron, cumin, cinnamon and cardamon.

Mmmmm... I will probably play with seafood and meat paellas. I will be working on two different paella (meat and seafood) dishes that would have been produced in later 16th century. This will allow me to avoid the seafood allergies/no pork for one and the avoid meat with the other. That should give me a wide range of audience to be able to partake and they should produce 2 very different flavor combinations.

Any volunteers for taste testing?

I have some cacao nibs around somewhere. I want to try making drinking chocolate with a Dutch influence. ;-) Sort of blending the hot drinking chocolate making the rounds of Europe at the very end of the 16th century with the Dutch spice profile from the East Indies. Just for giggles.
