Medieval Cake

Any one out there have a recipe for cake? I have one from Markham's "The English Hus-wife" that could work, but I am looking for suggestions.  Anyone on the German, French or Flemish front? I would be looking to use this as a subtlety base.

I've been seeing some recipes for mortar cakes. I've been wondering about them, but it seems that they made many things out of almond paste. That can get spendy though. Should I look at some of the mortar cake recipes?

If you wouldn't mind, that would be lovely. I am looking for something a little dense (to support weight), but not brick like.

It is going to be stacked into a shape of a beehive.
