Is beef tallow able to be consumed by kosher folks?

Usual disclaimers here, but... I *believe* the issue with beef tallow is that it has to come from a cow that was killed in kosher fashion, which is difficult to determine as far as most modern supplies go. If you get it from a kosher butcher, you should be good.

Note that it counts as a meat product, so it can't be combined with dairy ingredients in a particular dish -- i.e., it makes anything it's in a meat dish.

You can use goose fat as a kosher substitute, though!

That actually has potential. Especially what's given in the larder for Yule. I wanted to make sure I had a non-pork option for larding meats.

After checking with my resident Jew, she replies that Woodwindy's got it - long as the beef was killed kosher. (normal "do not mix with Dairy" restrictions apply.)

A kosher butcher. I wouldn't trust anything less to actually be kosher. Typing in "kosher butcher philly" brought up a number of locations.
