Knee deep in performing miracles. I have 3 sewing projects, ~100 buttons, 2 cooking projects, 3 bits of documentation and a gallon of squash soup to make before Saturday. I have 5 days. No problem...
Kat has a new Catalin dress, Griff will have a new blue/gray gentleman's outfit and Ian will have a new leezard fencing cote. I am making cherry tarts with port syrup and potage se llama hijada (spanish lamb stew) for A & S. Peach soup, cherry port sauce, squash soup part 1, gluten free bread, herb bread and 4 gallons of stock have all been made and frozen for Saturday's dayboard. I am going to display the soon to be king's new armor (since he didn't come to pennsic, I still have it).
I am hoping to have some "extra" tarts/sauce and fresh baked bread on hand for people. I will post pictures after coronation. Promise.

1 cup tapioca flour
2 cups white rice flour
1-1/2 tsp salt
1 Tbs Xanthan Gum
3 egg whites
2 tbl melted butter
2 tbl dry yeast
1 tbl sugar
1 ½ cups of water 104 F
Directions
1. Mix yeast, sugar, and water together
2. Let mixture sit for 5 minutes, until frothy
3. In mixing bowl with mixing paddle, combine all ingredients. Dough will be sticky.
4. On a greased cookie sheet, separate dough into 2 portions
5. Shape into loaves
6. Cover with a clean tea towel, and let the dough rise for 25 minutes
7. In a 350 degree oven; bake 35 minutes uncovered,
8. Cover with aluminum foil and bake for an additional 35 minutes
9. Let the bread cool on a wire rack for 10-20 minutes before slicing.

I'd been told that good gluten free bread dough was nearer a batter. Guess that's the truth!
