To bake a Turkie.
TAke and cleaue your Turkie on the backe, and bruise all the bones: then season it with salt, and pepper grose beaten, and put into it good store of butter: hee must haue five houres baking.

Well... I think they mean take the back of your knife and crack them, so that the marrow gets released when it is cooking and you will get a lovely goo at the end of the baking process that you can use to make a wonderful sauce.

The butter is larding process. It adds moisture.
