[SCA] Upcoming classes

I will be teaching 2 classes for the upcoming Chirurgy and Cooking: A Winter Schola. One is on period sugar work including structural subtleties and the other on preparing poultry for gallontines.

I guess this is motivation for finally getting the butchery documentation together.
